Surveys Show a Decline of Major Nutrients’ in our Food
“There has been a sharp decline in the vitamin and mineral content of American and British food since the last comprehensive survey published over 20 years ago.” Source: The United States Dept of Agriculture 1998. Research at the University of Texas also revealed that over the past two decades “major nutrients in fruits and vegetables have declined SUBSTANTIALLY”. A further report from the USDA Data Laboratory confirmed “recently grown (food) crops have shown decreases of up to 38% in Protein, Calcium, Vitamin-C, Iron, Phosphorus and Vitamin-B² (Riboflavin), when compared with produce from past decades”. In addition, in 1992, the US Earth Summit reported that in North America, essential minerals have decreased in farmland soil by a staggering 85% and in Europe by 72%.
These findings are almost identical to those obtained from similar trials conducted in Britain and Canada (the UK results were published in the ‘British Food Journal’). Some of our most popular foods were included in the trials, such as potatoes, tomatoes, oranges, bananas and apples. In today’s average potato, for example, Vitamin-B¹ (Thiamine) has declined by 18%; Calcium by 28%; Vitamin-B² (Riboflavin) by 50%; Iron by 57%; Vitamin-C by 57%; and Vitamin-A by a massive 100%. Similar results were found in all of the 25 fruits and vegetables analyzed.
Over the past few decades’ intensive farming practices and over use of chemical fertilizers, pesticides, herbicides etc. have had a massive, negative impact on the nutrient content of farmland soil, resulting in a dramatic reduction of nutrients in our food crops. The poverty of our soils not only translates into a lack of minerals in our food crops, it also diminishes the plants own ability to manufacture other essential nutrients like vitamins, fatty acids and amino acids.
Modern Harvesting and Storage Practices Further Reduce Nutrients
In addition to the loss of vital nutrients in our soil, most of our food crops (including organic crops) are now harvested ”green”, or before they are fully ripened. This is to enable them to last longer in storage, but it also leaves insufficient time for the plant to fully absorb whatever minerals are available in the soil, and to synthesize vitamins and other nutrients. The ripening process continues, cut off from the soil and sun, in box and storage depot, often for months, resulting in further losses of vitamins and other essential nutrients.
Today’s Food Lacking Important Nutrients
As a result of these practices, our modern diet is often extremely low, or in many cases lacking, in important nutrients, and is therefore unable to provide us with the complete, well-rounded nutrition vital for our total health and wellbeing. According to a US Senate Report, “67% of all diseases are diet related”, and in June 2002, an article in the Journal of the American Medical Association concluded, “nutritious deficiencies are an important cause of chronic disease”.
